Lil Pumpkin Spice

Lil Punkin' Spice

You know... Pumpkin is probably one of the greatest fall bringings ever, aside from apple cider and Christmas ale of course. I put this recipe together to really bring together the best fall flavors in a nice sweet little dessert.

Ingredients

Light   Brown Sugar   0.5   cup
 Salt   0.25   tsp
 Cornstarch   0.25   cup
 Whole Milk   2   cup
 Vanilla   Extract   1   tsp
 Eggs, Large   1   ea
 Pumpkin Puree   0.75   cup
 Pumpkin Pie   Spice   0.5   tsp                 
 Heavy cream   1   cup
 Powdered sugar   0.25   cup
 Vanilla   Extract   1   tsp                 
 Caramel sauce,   as needed         

Instructions

  1. In  medium saucepan, combine sugar, cornstarch, salt. Whisk  in milk and  vanilla, then the egg until fully incorporated.  Cook over med  heat, stir constantly, until larger bubble form  in center of  the pan. Reduce to low heat, cook 1 minute then  remove from  heat.
2. Pour through mesh strainer  in med bowl. Force with whisk.
3. Whisk  together with pumkin puree and spice.  
4. Divide  among wine glasses. Chill until cool.  
5. To make whipped cream,  combine all ingredients into med  bowl. Beat until stiff peaks  form. Chill, then spread top off each  wine glass  with whipped cream, level off, finish with caramel  drizzle.
